However, one of the biggest influences on a coffee's flavor happens long before roasting ever begins. Coffee processing refers to the method used to remove the fruit from the coffee bean after it is harvested, and each process can have a significant impact on the final cup. The most common process is the washed process, sometimes called the wet process. During this method, the outer fruit is removed from the coffee cherry before the beans are fermented, washed, and dried. Because much of the fruit is removed early in the process, washed coffees are often known for their clean, crisp flavors and bright acidity. Many coffee lovers appreciate washed coffees for the way they allow the bean's origin characteristics to shine through, highlighting the unique qualities of the region where the coffee was grown.
Another popular option is the natural process, where the entire coffee cherry is dried with the bean still inside. As the fruit dries, sugars and flavors from the cherry interact with the bean, often creating coffees with more body, fruit-forward notes, and a sweeter overall profile. Building on this concept, some farms also utilize honey processing, which removes the outer skin of the cherry but leaves a portion of the sticky fruit layer, known as mucilage, attached to the bean during drying. Honey processed coffees often strike a balance between washed and natural coffees, combining sweetness and body with a clean, enjoyable taste.
